Mediterranean Quinoa

Ingredients

1 cup cooked quinoa

1/4 cup -1/2 cup chopped fresh parsley

1 English Cucumber sliced and quartered

1 Red pepper diced

10-15 Cherry tomatoes quartered

Half red onion diced


Dressing

4 Tablespoons olive oil

1 lemon

1/2 tsp oregano

1/2 tsp garlic powder

1 tsp salt

1/2 tsp pepper

Cook quinoa according to directions. I personally love to steam my quinoa after I cook it. I pour the quinoa into a sieve and then put the sieve over about an inch of water in a sauce pot. Cover it with a lid and turn the pot of water to high. The boiling water underneath steams some of the moisture out of the quinoa. I do not like mushy quinoa.

Chop veggies. Add dressing and toss. Wait for quinoa to cool and then mix in.

I personally add sliced chicken breast and avocado on top for good fat and protein to balance out the carbohydrates.
