Peanut Butter Chocolate Chip Cookies (Gluten Free)
Ingredients
• 1 cup unsalted almond or natural peanut butter (no added oils or sugars)
• ¾ cup coconut palm sugar
• 1 large egg
• ½ tsp baking soda
• ¼ tsp sea salt
• 3 oz dark chocolate chips – 70% or darker
*You can add a scoop of collagen powder for protein to hold the glucose response down. This may change the texture.
Directions
Heat oven to 350 degrees. Stir together the first 5 ingredients in a medium bowl. Stir in chocolate chips. Drop rounded tablespoons of “dough” onto baking sheets. Bake for 10-12 minutes or until lightly browned. Let cool for 5 minutes on baking sheets. Move to a wire rack and let cool for 15 more minutes. Enjoy!
