Almond Meal Chicken Nuggets
Ingredients
• 2 boneless chicken breasts
• 2 T. Olive oil
• ½ cup almond meal (NOT Flour. I buy the “meal” at Trader Joe’s)
• 3/4 tsp. paprika
• ½ tsp. salt
• ½ tsp. pepper
• ½ tsp. garlic
• ½ tsp. onion powder
Honey Mustard: (or I suggest using Primal Kitchen’s Unsweetened BBQ Sauce)
• Mayo
• Yellow mustard
• Honey (dab) or stevia liquid drops
Directions
1. Turn oven to to 400°. Pour olive oil on baking sheet and liberally coat pan. Put pan in oven while oven is preheating.
2. Cut chicken breasts into nugget sized pieces. Try to keep pieces even in size.
3. Mix almond meal and seasonings together. Coat all the nuggets in meal mixture before removing pan from oven. Sometimes if I am in a hurry, I will waste a gallon zip lock back and shake the chicken in the bag with the almond meal mixture.
4. When all the nuggets are coated, place on baking sheet. Cook 8 to 10 minutes or until lightly browning around nuggets where touching the pan. Flip nuggets over and cook another 8 to 10 minutes.
5. Serve with honey mustard or unsweetened BBQ sauce. Make by mixing mayo, yellow mustard, and a tiny dash of honey or stevia drops.
